Mascot Beer & Wine will make its best effort to create a unique place where customers may browse a small but well-curated selection of natural wines and craft beer in a contemporary, thoughtful environment. We will be in the business of helping educate our customers of what natural wine is and by providing piece of mind through great ambiance, convenient location, friendly customer service, and products of a consistently high quality and standards.
The definition of natural wine has several components. There are two parts of the vinification process that need to be considered when exploring what natural wine is: how the grapes were grown in the vineyard and how they were treated at the winery. There are certain practices in both areas that should be followed to create what we would consider a natural wine. We only market small growers, that use low-intervention farming and cellar practices, are sustainable, organic and/or biodynamic, use minimal or no sulfites, and who vinify through spontaneous fermentation with native yeast. Nothing added. Nothing taken away.
